Garri(Gari) Processing Line | Cassava Processing Machine
The automatic garri processing line is a series of cassava processing machines to make white garri(gari) or yellow garri(gari) from the fresh cassava roots. What is garri(gari)?
Does garri equal to cassava starch? Of course not. Actually, garri(gari) is the cassava full powder. Cassava originated in tropical America and is widely cultivated in the tropics and parts of the subtropical region, mainly in Brazil, Mexico, Nigeria, Indonesia, and other countries. As a rhizome crop, cassava has a very high starch content and is, therefore, a staple food for developing countries.
Nigeria is currently the world’s largest producer of tapioca(cassava) starch. Cassava mainly can be processed for making cassava starch, and cassava full powder(garri). Garri also can be called Gari, Eba, Kokoro and so on in most of Africa areas, it can be further cooked or fried for making various foods.
How to make Garri with the garri processing machines?
To make good garri(gari) from the fresh cassava roots, especially the mass production of fine garri powder, a variety of cassava processing machines are needed as the support. The entire gari production process including cassava washing and peeling, grating, dewatering, mixing and grinding, roasting, screening, and packaging.
Steps in garri processing
1. Cassava washing and peeling
Cassava washing and peeling machine can remove the dirt, sand or stones on the surface of the cassava roots and further removing the cassava skins with its inner water flows. The chosen cassava roots will be transported into the washing machine by a special screw conveyor or by manually adding. Then the cassava will roll continuously under the screw shaft force and brush rollers. The brush rollers in this washing machine are hard so that can peel the cassava quickly, and its peeling rate can reach 70%-80%. The water flows on the top of this machine can clean the cassava efficiently and wash way the cassava peels from the brush rollers.

2. Cassava grating
To crush the peeled cassava into small pieces or cassava mash, the cassava grating machine can be a good helper. The cassava grater has two pairs of inner crushing rollers in its grating chamber. The smaller crushing roller can do coarse crushing of the cassava, and the bigger one will do further fine grating of the cassava. We can use a conveyor for automatic adding of cassava for grating or put the cassava manually to the crushing machine inlet during the garri processing line.

3. Cassava mash fermenting
Before the cassava mash dehydration, we should do fermentation of the cassava slurry to increase the good tastes of the garri and improve various probiotics, protein, and amino acid content. We can use the clean polythene sack to divide the cassava mash into several bags and lay them on the rack for one or more days’ fermenting. The milky water will drain freely from the bags and we can use the container to collect them for extracting the cassava starch. Do not ferment the cassava slurry for a too long time, because long time fermenting will make the cassava mash become very hard.
4. Cassava mash dewatering
The common used cassava mash dewatering machine for garri production line is the hydraulic press equipment. When doing cassava dehydration, we should put the bagged cassava mash(which has been fermented) into the press barrel, then push the press button for cassava dewatering. The press force comes from the hydraulic power of this dehydrating machine. And the pressed milky liquid can be collected for making fine cassava starch.

5. Cassava cake crushing
After dewatering, the cassava pieces will be press into cake shapes. So that we should use a crusher machine for further crushing the cassava cakes into fine cassava powder. This small crusher machine will match with a dust collector when using in the garri processing line to avoid dust pollution.

6. Garri frying
This Garri Frying Machine is an important garri processing machine in the whole garri(gari) production line, which can do further dehydration of the cassava flour and can evaporate the poisonous hydrocyanic acid. Add the cassava flour into the frying pot which is a jacketed kettle with electric heating function, and then the inner mixing shaft will rotate for stirring the garri evenly.
When the frying temperature reaches about 50-60℃, the hydrocyanic acid will be evaporated greatly. During this cassava roasting link, we can also add the palm oil for making the yellow garri.

7. Garri(gari) powder sieving
The garri sieving machine is three-stages screening equipment for sieving out the fine garri powder. Pour the garri onto the screening mash, and the garri flour will be sieved layer by layer through the continuous vibration of this machine. After screening, we can get three kinds of garri powder with different fineness. And the gari with bigger particles can be re-crushed by the crusher machine for fine garri powder.

Garri VS Cassava Starch
The cassava starch is different from garri, we can see the big difference through the following aspects between garri(gari) and cassava starch.
- Processing crafts are different
The cassava flour(garri) is a powdery granule obtained by peeling and drying the cassava, and is also pulverized and granulated after being peeled and dried. However, cassava starch or tapioca starch is a kind of starch processed through the entire assembly line. The processing technology is complex, including peeling, washing, crushing, sieving, filtering, concentrating, dehydrating, drying, sieving, etc., resulting in a fine and high quality. Powdered granules are generally produced by industrial processes.
- Applications are different
Garri can not be eaten directly because it has a certain of poisonous hydrocyanic acid. But it can be cooked with water or milk, and it will be shown with transparent and elastic block shape. Tapioca starch can be used directly, which is a fine powder that does not form a mass when heated with water. Cassava starch is generally used as a seasoning in life. When cooking or making soup, tapioca starch will play a role in juice collection. When frying some foods, you can also wrap the tapioca starch on the outer layer of the food, which will make the fried food crisper.
